Pork Estofado Recipe

Pork Estufado is one of my favorite Filipino Pork recipe. I love the tangy combination flavor of pork simmered in pineapple juice, vinegar, soy sauce, garlic, sugar and more. This is a must try recipe for everyone to enjoy and great for special occasion.

Ingredients:

  • 2 lbs. pork meat, cut into serving size (liempo or pork butt will be the best cut)
  • 1 large potato, cut into 4
  • 2 cooking banana (saba or plantain banana)
  • 1 small red bell pepper, cut into big cubes
  • 5 cloves garlic, sliced thin
  • 1 small onion, diced
  • 1 cup pineapple juice
  • 1 cup water
  • 1/2 cup vinegar
  • 1/3 cup soy sauce
  • 2 tablespoon sugar
  • 4 bay leaves
  • 1/3 cup cooking oil
  • salt and ground pepper to taste


Instructions

  1. Fry bananas and potatoes, set aside.
  2. Brown pork in cooking oil until brown, set aside.
  3. Saute garlic and onion until caramelized. Add pork, vinegar, water, soy sauce and bay leaves.
  4. Cover and simmer in medium heat for 20 minutes or until meat is almost fully cooked.
  5. Add pineapple juice, sugar, ground pepper and salt to taste. Cover and simmer in medium heat for 15 minutes or until meat is fully soft and sauce thickens.
  6. Add bell pepper, fried potatoes and fried banana.
  7. Mix and simmer in low heat for 5 minutes.
  8. Remove from heat and serve hot. Enjoy!

CHICKEN ADOBO WITH GINGER & HONEY RECIPE

Chicken Adobo with Ginger and Honey is a delicious dish.
This recipe is same as cooking a regular Filipino adobo but with honey and minced ginger for additional taste.
A must try easy recipe for everyone to love.

Ingredients:

  • 2 lbs. chicken wings or chicken legs, cut into serving pieces
  • 6-8 cloves garlic, minced
  • 1 thumb size ginger, minced fine
  • 1/3 cup soy sauce
  • 3/4 cup vinegar
  • 1-2 tablespoon honey
  • 1/2 cup water
  • 3 bay leaves
  • 1/2 teaspoon ground black pepper
  • 2 tablespoon cooking oil
  • 1 stem green onion, chopped

Instructions

  1. Saute ginger and garlic in cooking oil till caramelized.
  2. Add chicken slices , stir and cook for 5 minutes or until chicken turns golden brown.
  3. Add bay leaves, soy sauce, vinegar, ground pepper, honey and water.
  4. Simmer in medium heat for 15 minutes or till chicken is almost fully cooked and sauce thickens.
  5. Remove pan from heat and add chopped green onions. Stir, transfer in a serving dish and serve hot. Enjoy!

CHICKEN INASAL RECIPE ( Chicken Barbecue on a Stick)

Chicken Inasal or also known as Chicken Barbecue on a stick is one of Filipino favorite street food. It is so good and easy to make, just marinate, skewers and grill. Great for parties or any gathering.

Marinade Ingredients

  • 2 lbs. boneless chicken thigh, sliced thin
  • 1/2 datu puti vinegar
  • 1/4 cup soy sauce
  • 1 tbsp. chopped ginger
  • 3 pcs. lemongrass, bruised
  • 6 pieces garlic clove, minced fine
  • 3 tbsp.. brown sugar
  • 3 tbsp.. kalamansi juice or lemon juice

You will also need:
  • bamboo skewers, rinsed and dry
  • charcoal
  • aluminum foil

For Basting:
  • 1 cup banana ketchup
  • 1/3 cup cooking

Instructions

  1. Combine marinade ingredients in a big container.
  2. Add chicken to the marinade and combine well until every piece is coated with the marinade. Marinate chicken for at least 4-6 hours or overnight in the refrigerator.
  3. Skewer marinated chicken meat on a stick.
  4. Wrap both end of the stick with pieces of aluminum foil to prevent the stick from burning.
  5. Prepare basting sauce by mixing banana ketchup, oil and left over marinade if any.
  6. Grill at medium heat charcoal for 3 to 5 minutes on each side and baste in between.
  7. Make sure to not overcook the chicken by covering the grill while grilling. It should be moist inside and cooked just right.
  8. Serve with your favorite dipping sauce like soy sauce combines with vinegar and chili pepper.
